Mike’s career began first as a self-taught chef working the Jacksonville scene and landing in the private club industry.  Mike truly embodies the engineer mentality, building and constructing not only unique and delicious dishes, but many of the props, vessels, and presentations used to display and serve them. His talent is well known around the city by his peers and reputation equally strong.  Most recently, Mike was requested and honored to be the official Chef for Team USA’s Ryder Cup team in France.  He (along with partner Adam) had the opportunity to travel with the team to France and provide meals throughout the week for golfers, spouses, team officials and others.

Next came Carrie. After graduating from UNF and working in restaurants and private clubs, she met Chef Mike and their friendship began. Carrie’s eye for design and craftsmanship is a perfect fit for her title, with creativity at her core. Growing up, attending college, and developing her career in Jacksonville, Carrie knows the area well and loves watching it grow. Carrie’s versatility and experience, stems from her knowledge of the restaurant world, as well as large scale private events, and many years of sales experience to help create the best events for those we are fortunate to work with.

And last was Adam to arrive and join the team.  After growing up in Saratoga Springs, NY and graduating from Cornell University’s Hospitality School in 2009, he moved to Florida and met Carrie and Mike through an opportunity at a private club.  Adam brings a more general knowledge of many areas related to business operations.  In particular, his engineering of the flow and logistics of events and operations helps create most efficient practices and procedures.

Adam is our Jack of all Trades!

And now the “Three-Headed Dragon” (as deemed by others) is taking on the Northeast Florida scene to create unique events with integrity, enthusiasm, and creativity!  We look to use local talent of others to help build partnerships throughout the city and beyond.
